How to make soft Idlis?

Idli is a popular South Indian dish made from fermented rice and black gram (urad dal) batter. To make soft idli batter, follow this recipe:

Ingredients:

  • 2 cups parboiled rice (idli rice)
  • 1 cup urad dal (black gram)
  • 1/2 teaspoon fenugreek seeds (methi seeds)
  • Salt to taste
  • Water for soaking and grinding

Instructions:

  1. Wash the rice and urad dal separately in water until the water runs clear. Soak them in enough water separately for about 4–6 hours. You can also add fenugreek seeds to the urad dal while soaking.
  2. After soaking, drain the water from both the rice and urad dal.
  3. In a wet grinder or a high-power blender, grind the urad dal first. Add a little water at a time while grinding to make a smooth and fluffy batter. The consistency should be thick and airy. It usually takes around 20–25 minutes to grind the urad dal.
  4. Transfer the urad dal batter into a large mixing bowl.
  5. Now, grind the soaked rice in the same way. Add water gradually and grind until you get a smooth batter. The consistency should be slightly grainy, similar to pancake batter.
  6. Mix the rice batter with the urad dal batter in the mixing bowl. Add salt to taste and mix well.
  7. Cover the bowl with a lid or a cloth and allow the batter to ferment. Keep the bowl in a warm place for about 8–12 hours, depending on the climate. The batter should rise and double in volume during fermentation.
  8. After fermentation, gently mix the batter again. Your soft idli batter is now ready.
  9. To make idlis, grease the idli plates with a little oil or cooking spray. Pour the batter into each cavity of the idli plates, filling them about three-fourths full.
  10. Steam the idlis in a steamer for 10–15 minutes or until they are cooked and firm.
  11. Once the idlis are cooked, remove them from the steamer and let them cool for a minute before removing them from the plates.

Your soft and fluffy idlis are now ready to be served! They are typically served with sambar, coconut chutney or Dosa Podi (As seen in the picture)
