Idiyappam

Idiyappam, also known as Nool Puttu or String Hoppers, is a popular South Indian dish made from rice flour. It is a steamed noodle-like dish that is often served with coconut milk, vegetable stew, or any curry of your choice. Here’s the recipe for making Idiyappam:

Ingredients:

  • 2 cups rice flour
  • 1 3/4 cups hot water (approximately)
  • 1/2 teaspoon salt
  • 1 teaspoon vegetable oil (optional, for greasing)

Instructions:

  1. In a large mixing bowl, add the rice flour and salt.
  2. Gradually add hot water to the rice flour while mixing it with a spoon or spatula. Keep stirring until the water is fully incorporated into the rice flour.
  3. Once the mixture is cool enough to handle, knead it with your hands until you get a soft and smooth dough. The dough should not be too dry or too sticky. If the dough is too dry, add a little more hot water. If it’s too sticky, sprinkle a little rice flour and knead again.
  4. Take an idiyappam maker (also known as a presser or string hopper maker) and grease it lightly with oil.
  5. Fill the idiyappam maker with the prepared dough.
  6. Place a steamer on the stove and let the water come to a simmer.
  7. Now, press the idiyappam maker in a circular motion directly over the steamer. As you do this, thin strands of the dough will come out and form a circle.
  8. Continue the process, forming multiple layers of idiyappam in the steamer. You can make one large idiyappam or multiple smaller ones.
  9. Cover the steamer with a lid and steam the idiyappam for about 7–10 minutes or until they are cooked and firm. They will turn slightly translucent when cooked.
  10. Once the idiyappam is cooked, carefully remove them from the steamer using a spatula.
  11. Serve the hot idiyappam with coconut milk, vegetable stew, or any curry of your choice.

Tips:

  • You can also add a little grated coconut to the dough for added flavor and texture.
  • If you don’t have an idiyappam maker, you can use a fine-holed colander or perforated plate with a cloth or banana leaf on top to press the dough into idiyappam.
